- Shrimps(shelled) 180g
- Egg White 3 pcs
- Spring Onion(chopped) 1 stalk
- Chicken Powder 1/4 tsp
- Water 20 ml
- Oil 1 tsp, 1 tsp
- Chicken Powder 1.25 tsp
- Rice Wine 1 tbsp
- White Pepper Powder 1/2 tsp
Separate white from yolk. Pour egg white into a bowl and add 20 ml of water and 1/4 tsp chicken powder. Stir well.
Mix shrimps, 1.25 tsp chicken powder, white pepper powder and rice wine in another bowl. Marinate for 15 minutes.
Add a 1 tsp oil in the wok over high heat. Fry shrimps until half-cooked. Set aside.
Stir-fry the egg white with 1 tsp oil over medium heat. When the egg white starts to coagulate, add shrimps and stir fry quickly until the egg white is completely cooked. Dish up and sprinkle spring onion on top. Serve.
