Braised Lamb Shanks with Red Wine

The lamb shank is soft and unique with red wine.


  • Lamb Shank 2 pc
  • Carrot(cut into pieces) 2 pc
  • Bacon(cut into pieces) 2 slices
  • New Potato 1/2 pound
  • Onion(cut into pieces) 1 pc
  • Garlic(minced) 2 cloves
  • Celery(thickly chopped) 2 sticks
  • Bay Leave 2 sheets
  • Rosemary 2 stalks
  • Red Wine 350ml
  • Chicken Broth 500ml
  • Olive Oil 1 tbsp
  • Pink Salt 1 tbsp
  • Black Pepper(chopped) 1 tbsp
  • Garlic(minced) 3 cloves
  • Rosemary 1 stalk
  • Olive Oil 1 tbsp
  • Pink Salt some
  • Rock Sugar 20g
  • Ground Black Pepper some


Step 1

Rinse lamb shanks and wipe dry. Rub over marinade evenly and refrigerate for a night.

Step 2

Heat a grill pan over medium heat. Fry the lamb shanks until the surface is completely golden.

Step 3

Heat olive oil in a deep pot over medium heat. Add onion, garlic, new potatoes, carrot, bacon, celery and bay leaves. Stir-fry until golden. Dish up.

Step 4

Put lamb shanks into the deep pot. Pour in red wine and chicken broth. Add rock sugar and cover the lid. Simmer over medium-low heat for about 1.5 hours and stir from time to time in due course to prevent the ingredient sticking to bottom of pot. When the lamb shanks are tender, add the stir-fried ingredients, rosemary and the remaining seasoning. Simmer for 15 minutes more until the potatoes are soft and sauce thicken. Serve.
