This is a traditional Chinese’s dish.
Tips: Use pinch of salt to rub the bitter gourd and leave for 10 minutes. Blanch the bitter gourd, it can reduce bitterness.
- Bitter Grourd(scooped out the white, soft part and seeds,sliced) 300g
- Egg(beaten) 3 pc
- Ginger(minced) 2 tsps
- Chicken Powder or Salt 2 tsps
- Oil 2 tsps
- Salt some
- Kitchen Towel
Use pinch of salt to rub the bitter gourd and leave for 10 minutes. Blanch the bitter gourd for 1 minutes. Drain then squeeze out the juice by kitchen towel, set aside.
Heat a frying pan with oil over medium high heat, add chopped ginger, stir fry until fragrant, add bitter gourd slices and chicken powder or salt, stir fry for about 1 minutes. pour beaten eggs, stir fry until they are scrambled. Serve.
