Salad with Chicken and Pomelo

Ingredients

  • Chicken Fillet 220g
  • Red-fleshed Pomelo 1/2 pc
  • Basil Leave 2 stalks
  • Cherry Tomato(sliced) 10 pcs
  • Shallot(sliced) 2 pc
  • Deep-fried Shallot Slices 2 tbsps
  • Deep-fried Minced Garlic 1 tbsp
  • Small dried Shrimps 2 tbsps
  • MARINADE
  • Fish Sauce 1 tbsp
  • Salt 1/4 tsp
  • Rice Wine 1/2 tbsp
  • Chicken Powder 1/2 tsp
  • Sesame Oil some
  • Ground Black Pepper some
  • SALAD DRESSING
  • Shallot(minced) 1 pc
  • Sugar 3 tbsps
  • Fish Sauce 2 tbsps
  • Limes(grind the peel, juiced) 2 pcs
  • Water 3 tbsps
  • Bird's Eye Chili(chopped) 1 pc
  • Coriander(chopped) 1/2 tbsp

Method

Step 1

Rinse and drain chicken fillet. Marinate for 30 minutes. Steam for about 15 minutes until done. Tear into shreds and set aside.

Step 2

Skin and seed the pomelo. Tear into small pieces. Dish up. Mix the ingredients of salad dressing and stir until the sugar is molten. Set aside.

Step 3

Soak dried small shrimps until soft and rinse. Fry in a plain wok without oil until golden and fragrant. Chop and set aside.

Step 4

Sprinkle deep-fried shallot slices, deep-fried minced garlic and chopped dried shrimps. Pour over the salad dressing and serve.
