Ingredients

  • Pasta(cooked) 16oz
  • Vegetable Broth 1/2 cup
  • Onion(diced) 1 cup
  • Garlic(minced) 4 tsp
  • Red Pepper(crushed) 1/2 tsp
  • Tomato Paste 1 tbsp
  • Tomato(diced plum) 6 cup
  • Kalamate Olive(pitted,chopped) 1/4 cup
  • Caper(rinsed,drained) 2 tbsp
  • Fresh Basil(chopped) 3 tbsp
  • Fresh Parsley(chopped) 3 tbsp
  • Fresh Oregano(minced) 2 tbsp

Method

Step 1

Heat broth to a simmer in a saucepan over medium-high heat. Add onion, garlic and red pepper and cook 4 minutes or until onions are translucent and beginning to brown.

Step 2

Stir in tomato paste and cook 1 minute, stirring. Add tomatoes, olives and capers and bring to a simmer. Reduce heat to medium and cook 20 minutes, stirring occasionally.

Step 3

Remove from heat and stir in basil, parsley and oregano. Serve over cooked pasta.
