Tips: 1. Simply version is no need passion fruit jelly topping.
2. Gelatin powder can replace leaf gelatin.
- CAKE BASE
- Digestive Biscuit Crumb 30g
- Unsalted Butter 15g
- PASSION FRUIT JELLY TOPPING
- Frozen Passion Fruit Puree 25g
- Caster Sugar 1/2 tsp
- Hot Water 20g
- Leaf Gelatin(soaked in water until tender) 1g
- Non-dairy Cream 30g
- Cream Cheese(soften in room temperature) 100g
- Caster Sugar 30g
- Milk 30g
- Pumpkin 100g
- Leaf gelatin(soaked in water until tender) 5g
- Hot Water some
- Heavy Whipping Cream 100g
Butter can be melted in microwave oven or in hot water bath. Pour digestive biscuit crumb into melted butter. Mix well. Transfer to 6 inch mould. Spread out evenly in mould and flatten with a small spoon.
Beat heavy whipping cream with electric mixer until stiff. Chill in fridge and set aside.
Remove pumpkin seeds and peel. Dice pumpkin. Put on plate and steam over high heat for 15 minutes until tender. Mash pumpkin with small fork.
Beat cream cheese with electric mixer at medium speed until soft. Add sugar in 3 portions. Keep beating with electric mixer until even. Add milk and mashed pumpkin. Mix well.
Dissolve leaf gelatin in hot water. Add gelatin solution into pumpkin mixture and mix well with rubber spatula. Use rubber spatula. Use rubber spatula to stir in the heavy whipped cream. Pour into mousse ring. Chill in fridge until set.
Warm frozen passion fruit puree in microwave oven to warm liquid. Add a little caster sugar and stir until sugar dissolves.
Dissolve leaf gelatin in hot water. Add gelatin solution into passion mixture. Mix well. Let cool. Drizzle over cheese cake. Chill in fridge overnight.
Beat non-dairy cream with electric mixer at medium speed until stiff. Pipe to form cream decorations. Decorate with fresh fruits of personal preference. Serve.
