Ingredients

  • Chicken(cut into pieces) 1/2 pc
  • Onion(diced) 1/2 pc
  • Potato(cut into wedges) 1 pc
  • Carrot(cut into wedges) 1/2 pc
  • Shallot(sliced) 3 pc
  • White Wine 1 tsp
  • Garlic(minced) 1 tsp
  • Oil 2 tsps
  • Cheese(shredded) some
  • Shredded Coconut some
  • MARINADE
  • Salt 2 tsps
  • Sugar 1 tsp
  • Cornstarch 1 tsp
  • SAUCE
  • Chicken Broth 250ml
  • Turmeric Powder 1 tbsp
  • Coconut Milk 100ml

Method

Step 1

Preheat the oven to 220 degrees. Marinade chicken pieces for 15 minutes.

Step 2

Heat up 2 tsp oil in the wok, saute the minced garlic, shallot and onion. Add the chicken pieces and stir-fry until it turns golden brown, saute with with white wine. Add potatoes, carrots and stir fry on high heat for 3 minutes. Saute with turmeric power. Then turn to medium heat.

Step 3

Add the chicken broth. Turn to low heat when it boils. Simmer the potatoes until softened. Add coconut milk cook until the sauce thickens. Pour onto an oven tray. Sprinkle cheese and shredded coconut on top, bake for 7 minutes until the shredded coconut turns golden brown. Serve.
