Lobster Bisque

The soup is rich and soft. It is lobster taste fully.

Tips: 1. The bake time of lobster head is not too long. It avoid coke and bitter.
2. It is match with garlic bread.

Ingredients

  • Lobster Head 500g
  • Onion 1 pc
  • Carrot( small size) 1 pc
  • Tomato(peeled) 2 pc
  • Celery 1 stick
  • Bacon 2 rasers
  • Tomato Paste 2 tbsps
  • Flour 2 tbsps
  • Butter 2 tbsps
  • White Wine 1 cup
  • Thyme 1 sprig
  • Bayleaf 1 sheet
  • Black Peppercorn 2 grains
  • Brandy 1 shot
  • Cream 1/2 cup
  • Chicken Broth 1 lit
  • Salt some

Method

Step 1

Chop the lobster heads and roast in the oven at 180 C until bright red and cooked all the way through.

Step 2

Roughly chop the vegetables and bacon.

Step 3

In a heavy pot heat the butter and add the vegetables and bacon, cook slowly and do not brown. Add the pepper and herbs and continue cooking for 4~5 minutes.

Step 4

Sprinkle with flour and mix very well to avoid any lumps, add the tomato paste and cook 5 minutes.

Step 5

Chop and add the tomatoes, slowly add the wine while stirring well, gradually add the broth and simmer for 35 minutes, add some salt to taste. Add the lobster heads and continue cooking for 30 minutes.

Step 6

Bland everything, including the shells and pass through a very fine strainer. Finish with brandy and cream, check the salt one more time and serve.
