The dish is mexico style. It is cheese and cumin fully.
Tips : The tortillas that has been prepared must be keep warm ,otherwise it will harden.
- Chicken Breast(boneless) 4 pcs
- Cumin 15 g
- Chili Powder 45 g
- Garlic 2 cloves
- Garlic Powder 1 tsp
- Onion(diced) 1 pc
- Green Bell Pepper(diced) 1 pc
- Red Bell Pepper(diced) 1 pc
- Oil 3 tbsp
- Tomato(chopped) 250 g
- Chicken Broth 250 ml
- Salt some
- Cheddar Cheese(dhreded) 200 g
- Salsa some
- Sour Cream some
- Soft Flour tortillas 12 pcs
In a four quart pan add chicken breasts and salt, cover with water, bring to boil, loosely cover. Cook over medium low heat for 1 hour, drain saving broth. Set chicken aside to cool. Then chop in small pieces.
In same pot add oil, saute onion and bell peppers. cooking over low heat until lightly sauteed. Add chicken cooking 3 or 4 more minutes. Blend can tomato, chili powder, garlic and cumin in blender. Pour mixture in pan and simmer over medium heat about few minutes, salt to taste.
Heat a thin layer of oil in a heavy medium- size pan over medium- low heat. Place a tortilla in the pan and sprinkle with 1/4 cup cheese. Add about 3 tbsps of the strained chicken mixture and top with another 1/4 cup cheese.
Cover with another tortilla and cook for 2~3 minutes or until golden brown. Flip the chicken quesadillas oven and cook for an additional two minutes. Remove from heat and cut into wedges. keep warm while frying the the remaining chicken quesadillas.
