- Grass Carp(cut to pieces) 600g
- Sesame Oil some
- Oil 750ml
- Light Soy Sauce 1 tsp
- Dark Soy Sauce 1.5 tbsp
- Shaoxing Wine 1 tbsp
- White Pepper Powder some
- Peppercorn 1/2 tsp
- Star Anise 2 pc
- Rock Sugar(hashed) 4 tbsp
- Chinkiang Vinegar 4 tbsp
- Water 100ml
- Light Soy Sauce 1 tbsp
- Spice powder(for later) 1/3 tsp
Scale grass carp, rinse well and cut into pieces, stir in marinade and leave for 30 minutes drain for later use.
Put in sauce ingredients to a small pot and power heat cook until sauce thickens. Add spice powder to sauce. Set aside.
Heat 750ml of oil in a pot with medium heat. Deep-fried marinaded fish until golden brown, then dip fish pieces into sugar and vinegar sauce to absorb flavor and remove briskly.
Dish up fish pieces and sprinkle a little sesame oil to serve.
