Braised Eel with Fermented Soybean Sauce

The eel is crispy and unique.

Tips: Boiling water can remove the slime.

Ingredients

  • White Eel 600g
  • Shallots 2 cloves
  • Fermented Soybean Paste 1 tbsp
  • Ginger(finely chopped) 2 tsp
  • Cornflour some
  • Oil 1 tsp, (for deep-fry) 750ml
  • MARINADE
  • Wine 1 tbsp
  • Egg White 1 tbsp
  • Salt 1/4 tsp
  • Ginger Juice 1 tsp
  • White Pepper Powder 1/2 tsp
  • SEASONING
  • Light Soy Sauce 1 tbsp
  • Sugar 4 tsps
  • White Pepper Powder 1/2 tsp
  • Water 6 tbsps

Method

Step 1

Rinse white eel and bone. Scald for a while to remove the slime. Wipe dry and slit crosses on the surface. Marinade for 15 minutes.

Step 2

Heat oil in a wok. Coat eel with cornflour and deep-fry in boiling oil until golden brown. Drain and set aside.

Step 3

Heat a 1 tsp in a wok. Stir- fry shallots, chopped ginger and fermented soybean paste until fragrant. Add seasoning and eel. Stir-fry well and serve.
