Ingredients

  • Soft Slate(pork) 500g
  • Ginger 5 slice
  • Spring Onion(cut into sections) 1 stalk
  • Garlic(sliced) 2 grain
  • Oil(For deep fry) 750ml
  • Oil 2 tbsp
  • SEASONING
  • Salt 1/2 tsp
  • Rocky Sugar 50g
  • Dark Soy Sauce 1 tsp
  • Shao Hsing Wine 1.5 tbsp
  • Red Rice Liqueur 1 tbsp
  • Aniseed 1 grain
  • Cayanne Pepper 3 grain
  • Water 1/2 cup

Method

Step 1

Cut the pork into square shape. Wash and drain. Marinate with 1/4 tsp of salt 1/2 tsp of dark soy sauce for 10 minutes.

Step 2

Heat the wok with oil, then, deep-fry the pork for 2 minutes.

Step 3

Heat the wok with 2 tbsp of oil. Stir-fry the ginger, spring onion and garlic. Pour in wine, water, seasonings and spices.

Step 4

Add the pork (the skin should face up) into the wok. Cover the wok and boil for 12 minutes. Reduce the heat to low and braise for 2.5 and 1/2 hours. Ready to serve when the meat a tender.
