2. White wine can replace rice wine.
- Clam(washed) 900g
- Chicken Broth 1 lit
- Shallot(sliced) 3 pcs
- Lemongrass(squash,cut into strip) 2 stalks
- Ginger 2 slices
- Garlic(minced) 2 cloves
- Basil 1 stalk
- Salt 1 tsp
- Rice Wine 1 tsp
- Oil 2 tsp
- Red Chili(chopped) 2 pcs
Add salt to a bowl of water. Put the washed clams into it for 30 mins to remove the sand. Drained and set aside.
Heat up 2 tsp oil in the pot. Saute the shallots, minced garlic, lemongrass and ginger for 2 mins. Add the clams, sizzle in rice wine, pour in chicken broth and bring it to the boil.
Add basil and cook over a medium-high heat until all the clams open up. Serve after seasoning with salt and red chili.
