- Beef(minced) 500g
- Onion(diced) 1 pc
- Garlic(minced) 2 clove
- Tomato Paste 3 tbsps
- Sugar 1 tsp
- Tomato(crushed) 1 can
- Thyme 1 tsp
- Salt some
- White Pepper Powder some
- Eggplant(stem removed cut lengtheise) 3 pc
- Oil 4 tbsps
- Cheese 4 slices
For the meat sauce: Brown the meat in a very hot non-stick pan with no oil. About 8 minutes. Set aside and strain the excess fat.
In a large pan, heat up the oil over medium heat. Saure the onion until golden brown, at the garlic. Cook for another 2 minutes. Add the tomato paste, mixed well, and then add the beef and thyme. cook for 2 minutes and then add the crush tomato.
Bring to a boil and turn the heat down to simmer for about 30 minutes. Brush the eggplant with oil. Pan-fry or grill each side for 2 minutes.
Preheat the oven to 200 C for 10 minutes.
Arrange the grilled eggplant skin side down on a deep baking dish. Spoon the meat sauce over the top. Layer the cheese on the meat sauce.
Bake in a 200 C oven for 25 minutes until the eggplant is soft and cheese has melted. Serve with hot.
